Recipe: Breakfast Tacos


These breakfast tacos were WAY better than I anticipated to be completely honest with you. Honestly, I think they were just what I was craving the day I made them. I opened the fridge and saw I had tortillas and said, " Ooh, breakfast tacos, let's do it.


The thing I love about breakfast is you can honestly make it your own. Throw whatever you have in the fridge or follow a specific recipe. In this case, it started out as whatever I have in the fridge but this will definitely become a staple moving forward.


What you need:

1 chicken apple sausage ( I used Trader Joe's), diced

1/2 cup of garbanzo beans

A handful of cherry tomatoes

2 eggs

1/2 avocado

Cilantro

Salt, Pepper, and Tajin

Salsa of choice (I used a fire-roasted salsa for this one)

3-4 Tortillas (I used Sieta Almond Tortillas)



What to do:


In a pan, drizzle some olive oil and toss in your tomatoes, chickpeas, and chicken sausage on medium heat.


Season with your desired salt, pepper, and tajin. Let it simmer until tomatoes are softened and sausage is golden on the outside.


Crack the 2 eggs into the pan and cook them until desired texture.


Warm your tortillas either on a pan or in the microwave on a microwave-safe plate. Serve your scramble into the three tortillas.


Top off with cilantro and thin slices of avocado.


Enjoy with your salsa and breakfast beverage of choice!
