Recipe: Mango-Blueberry Popsicles




Especially here in the desert, the summers can be quite brutal! There is nothing like grabbing a refreshing popsicle to cool off without wondering what all is in it. These homemade popsicles take no time to whip up and can live in your freezer ready to go when you need them.


Blueberries are one of the best fruits you can eat, packed with antioxidants and nutrients, protect against free radicals, support brain health, are low on the glycemic index which supports healthy blood sugar balance and so much more!


Mango is also loaded with nutrients, supports immune support, and can help aid with digestion as it's a good source of digestive enzymes.


What you need:

2 cups frozen blueberries

2 tbsp shredded coconut

2 cups frozen mango 2 tbsp chia seeds

2/3 cup vanilla yogurt (I used Cocoyo dairy-free yogurt. But you can use another greek yogurt!)

1/2 coconut water


What to do:

Add the frozen blueberries and 2 tbsp of shredded coconut into your blender and blend until its nice and thick! Feel free to add in 1/4 cup of coconut water to help get things blending. Place in a bowl and put in the freezer.








Add the mango, chia seeds, and the rest of the coconut water to the blender and do the same thing. Once you have both fruits blended and your yogurt, add them into your popsicle molds 1 tbsp at a time.



Ideally, you'll want to start with a fruit layer first. If you want them mixed or marbled, take a straw and mix them up in the mold.


Place these bad boys in your freezer and grab them on a summer day or when you just want something refreshing!
