Recipe: Breakfast Casserole Bake


All you meal preppers out there, this one is for you.


And if you aren't, then this might be what turns you because it doesn't get much easier than this my friend.

If you have just 10-15 minutes to do some chopping and whisking then this recipe is one you have to try on a Saturday or Sunday to help prep some easy grab-and-go breakfast for the upcoming week.


What you need:

6-8 eggs, whisked

2-3 Chicken apple sausages (I used the ones from Trader Joe's)

1/2 bell pepper, diced

1/2 cup cherry tomatoes, diced

1/2 a zucchini, diced

1/2 cup green onion

Mini potatoes (I honestly didn't measure these because I LOVE breakfast potatoes but roughly 1-2 cups diced, but I always love to add more!)

1/4 unsweetened nut milk or milk of choice


What you need to do:

Pre-heat your oven to 400 degrees F. Lineine your baking pan with either parchment paper or spray with some avocado oil (so it's well coated)


Dice up your chicken sausage, tomatoes, potatoes, zucchini, pepper, and green onion and toss into your pan. Season these with salt, pepper and garlic to your desired flavor profile!


In a separate bowl, whisk up 6-8 eggs. Add in a few pinches of salt and pepper. And pour in your milk to make the eggs creamy.


Pour the egg batter in the baking sheet, ensuring to cover all areas of the filling mix.


Bake in the over for 45 minutes (but be sure to check since all ovens cook a little differently). If it starts to brown before all the egg is cooked, you can put some aluminum foil over top until its cooked all the way through.


Let it cool & slice into cubes or squares & store in the fridge for an easy grab and go option.


Some ways I love to enjoy this:

- On a plate topped with some cheese, paired with some yogurt and fruit.

- In between an English muffin or toast for a makeshift breakfast sandwich

- Re-heated and rolled in a tortilla with some salsa and avocado for an easy breakfast burrito
