Recipe: Buffalo Chicken Salad


Buffalo Chicken is a favorite in this house, and making this buffalo chicken salad is one the easier meal prep options out there. It takes minimal ingredients, but you can prep in under 15 minutes.


What you need:

4 cans of organic chicken breast (you can also use a rotisserie chicken, peeled and shredded)

4-5 large stalks of celery, diced

1/2 cup of shredded carrots

1 cup buffalo sauce (more/less depending on your preference)


What to do:

Drain the canned chicken and dump into a bowl. Using a fork, break up the chunks.


Chop your celery stalks and add in the bowl, along with the shredded carrots.


Mix in your buffalo sauce and toss until well-coated.


Place into a storage container and keep in the fridge until ready to eat.


Optional: serve with some Primal Kitchen ranch dressing and Simple Mills crackers for an easy, protein packed lunch! You can also add in some avocado sliced for some extra healthy fats!
