Recipe: Egg Roll in a Bowl




Bring one of my favorite Asian appetizers home & beefing it up a bit! Make this egg roll in a bowl the next time you contemplate carryout but want to health-ify it! This has tons of veggies, plenty of protein & total control of what oil is used :) and as always make this your own, add in more to spice things up. Try it & let me know what you think!


What you need

2 garlic cloves, minced

1 small onion, diced

1 tbsp ginger, minced

1 pound of ground protein (pork, chicken or turkey)

1 tsp salt

3-4 tbsp coconut aminos (I didn't have coconut aminos so I used Tamari)

A half a bag of broccoli slaw

1 small cabbage, shredded

cilantro & green onion


Instructions:

Dice up your onion and garlic and sautee in a pan with a little olive oil. Add in your ground protein (beef, pork, turkey etc). Cook and add in any additional spices as desired.


Once the meat is fully cooked, add some coconut aminos (or tamari & soy sauce work as well) until fully absorbed. Add your shredded cabbage & broccoli slaw to the pan and cook until wilted.


Toss it. all into a bowl and enjoy!
