Recipe: Greek Quesadilla


We love a good Mediterranean dish in this house!! If you want something a little different from the traditional Greek bowl, you might want to try this spin on your next quesadilla.


Its just as easy to whip up and oh so delicious!


What you need:

1 lb Ground lamb

2-4 almond flour tortillas (I love Siete's)

Shredded Mozzarella or Cheddar cheese (I always use a Raw Cheddar)

1 cup cherry tomatoes, diced

2 Persian cucumbers, diced (You can also use an English cucumber/regular cucumber)

Greek yogurt (plain)

Fresh dill

Lemon juice

Salt, Pepper & Garlic

Red Wine Vinegar



What to do:

In a pan cook your ground lamb (just like you would ground beef) and season with salt, pepper, and garlic to your liking.


While that is cooking, in a blender mix up 1 cup of Greek yogurt, 1/2 lemon juiced, 1 Persian cucumber, and a big bunch of dill. Blend together to make your tzatziki sauce and place in the fridge. Feel free to taste test and add additional based on your desired taste profile.


Heat up a second pan and when the lamb is cooked, toss one tortilla one the second pan. Top the tortilla with ground lamb and cheese, then place the other tortilla on top. Cook until melted inside and golden brown on the outside.


Dice up the second cucumber and your cherry tomatoes, and drizzle with some red wine vinegar & salt and pepper if desired.


Enjoy your Greek Quesadillas with a tzatziki drizzle and cucumber-tomato salsa! Good to throw together as a second meal after Greek bowls if you have them for dinner or for those picky eaters in the house.
