Nachos are a go-to for gatherings, sporting events, and appetizers to share but it can also be an easy meal to throw together that everyone will love.
The more you add to them, the more fun they can be so why not make sure you have more than plenty on there?
What you need:
1 bag Siete Chips
1 can pinto beans, rinsed & dried
1 cup of cherry tomatoes, diced
1 can organic corn, rinsed & dried
1 can mild green chilies
2 pounds grass-fed beef
1 red bell pepper, diced
1 large bunch of cilantro
1-2 avocados, mashed
a ton of cheese (I used Raw Cheddar)
1 packet taco seasons (I used Siete)
What to do:
Preheat your oven to 400 degrees and lay your chips on a baking sheet lined with parchment paper. Then set to the side.
Open you can of beans and corn, rinse and set to the side to dry. Then chop your tomatoes, red bell pepper, and cilantro.
In a pan, cook your ground beef until browned, then add your taco seasoning (how much can be varied depending on the intensity of mexican flavor you want.)
Next, layer your nachos - start with the ground beef, and a little bit of the beans, corn, tomatoes, green chilies, and peppers.. Feel free to add cheese about halfway through to help melt and bind it all together.
Pop in the oven and bake for about 10 mins or until the cheese is fully melted!
Top off with your avocado and cilantro & enjoy!
