Recipe: Peach Bruschetta

I have been on a peach kick this summer and this peach bruschetta is a great summer app for your next bbq or even summer lunch or dinner.

The peach flavors add some light and fresh taste to it and not to mention are packed with Vitamin A, which is essential for the prevention of night vision issues, maintaining healthy mucus membranes, and supporting healthy skin.

Whip this one out as your next summer soiree!

What you need:

1 ripe peach (I used yellow peach but white would work too!)

1 tomato

1/3 of basil, sliced into strips

1 clove of garlic

1 tbsp Balsamic Vinegar

1 tbsp Olive Oil

Sour Dough Bread (or your bread of choice)

What to do:

Dice up your peach, tomato, basil, and garlic. Toss it all in a bowl and mix together.

Add in your balsamic vinegar & olive oil to the mix. Let marinade together for about 30 minutes if you can.

Slice up your bread into thin (roughing 1 inch) slices.

Drizzle olive oil on both sides of the bread and bake for 5 minutes each side in the over at 400 degree F.

Top your bread slices off with the mixutres and enjoy!
